What is Caparozzolo

The clam known as Vongola Verace in Veneto is called “caparozzolo” and Italy is the largest producer in Europe. Most of the farms are in the lagoons of the Upper Adriatic: they need shallow lagoon waters, sand and mud bottoms, single-celled organisms as food.
The farming begins with the sowing of 4-5mm clams which must be covered with nets to protect them from predators: crabs and marine snails.
After a year and a half they reach 35 millimeters and are ready to be eaten!!
